Have you tried a recipe that highlights a combination of really bold spices?

Well, this 'Spicy Chinese Chicken and Rice' recipe will surely give you that full, delicate flavour.

Our featured recipe , makes use of rice vinegar for the dressing which delivers sweeter taste; and is in fact, a good substitute for the regular vinegar.

What we will need to prepare are Chicken Marinade, Rice and Dressing/Garnish.
Let us now have a quick look on the ingredients and the cooking instructions courtesy of USA Rice:

Chicken Marinade 
  • ​3/4 cup soy sauce 175 mL
  • 1/3 cup molasses 75 mL
  • 1/2 cup sesame oil 125 mL
  • 2 tbsp brown sugar 25 mL
  • 1 tbsp finely chopped garlic 15 mL
  • 1 tsp salt 5 mL
  • 1 tsp pepper 5 mL
  • 12 boneless, skinless chicken breasts 12

Combine marinade ingredients.

Add chicken breasts and marinate, refrigerated, 4 to 6 hours.
Drain the chicken; bring marinade to a boil, cool and reserve.

Grill the chicken breasts and slice the breasts into 1-1/2 inch x 1/2 inch strips (3.5 cm x 1 cm).

Rice 3 cups uncooked long grain white rice 750 mL 6 cups chicken broth 1.5 L 1/2 tsp salt 2 mL 1/2 tsp red chili flakes (optional) 2 mL

Combine all ingredients in a large-heavy bottomed pot and bring to a boil. Cover, reduce heat and simmer for 15 to 20 minutes.

​Let rest 5 minutes, remove lid and fluff rice.
Dressing and Garnish 

3/4 cup reserved marinade 175 mL
1/4 cup natural rice vinegar 50 mL
3 tbsp peanut oil 45 mL
2 tbsp finely chopped fresh ginger root 25 mL
1 tbsp brown sugar 15 mL
2 tsp finely chopped garlic 10 mL
1-1/2 tsp roasted, cleaned and finely chopped jalapeño pepper 7 mL
1 cup thinly sliced green onion 250 mL
1 cup sliced and toasted almonds 250 mL


Combine dressing ingredients except for the green onions and almonds. Add half the dressing to the cooked rice, combine and let cool.

Arrange grilled chicken on a platter, garnish with the green onions and almonds and serve with rice and the reserved dressing.

YIELD: 24 SERVINGS

​Cooking Sun Moon Jasmine Rice

1. In a 2-quart saucepan, place 1 cup rice and 2 cups of water, 1 teaspoon salt (optional), and 1 tablespoon oil, butter or margarine (optional). For drier, firmer rice, use less water.

​2. Bring rice to a full boil. Reduce heat to simmer (low boil). Cover with a tight-fitting lid and simmer for 15 to 20 minutes or until liquid is absorbed.
​
3. Remove from heat. Fluff with a fork and let stand 5 minutes.

Yield: 1 cup uncooked rice yields 3 cups cooked rice.

Let us face it, Christmas is the time of the year when you are likely to see more of your friends and family members.

It is the season of entertaining and serving delicious, appetizing foods and drinks.

Do you have enough ideas on what sort of foods to prepare?
How about something that is awesome for serving either breakfast or lunch?
Have you thought about preparing brunch rice?

Brunch Rice is a great menu for a get-together.

It can be quickly prepared in a matter of minutes. It is such a delicious dish to serve when entertaining drop-in visitors.

Here are the ingredients to prepare for the Brunch Rice: three (3) cups of cooked rice (or about 750 ml); six (6) eggs; four tablespoon of 2% milk (or 60ml).
You will also need about one (1) tablespoon of butter (or 15ml); one-half (1/2) cup of diced carrots (or about 125ml) and (1/2) one-half cup of diced mushrooms (125ml); one (1) large tomato (diced) and green pepper (sliced); pepper (optional) and fruit.
​

Melt butter in a saucepan; cook carrots, mushrooms and green pepper until tender. Then lower heat. Whisk eggs in a bowl; add milk (and pepper, if you prefer); then mix with vegetables in saucepan. Stir for about a minute or two or until you notice eggs are nearly cooked.
Now, you are ready to mix cooked rice in pan. You can add pepper (optional) and fruit to add flavour.

This brunch rice recipe can make about four (4) servings.

Going vegetarian would require finding foods that should have a good replacement for lost nutrients (mostly found in protein-rich meat foods).

Our featured Indian-inspired Apple Pilau dish is a fine example of a vegetarian menu that has a nutritious set of ingredients, such as protein-rich cashews which are a good source of antioxidants, and nutritive apples which provide essential substance.

To start off, gather all the ingredients. You can use two (2) cups of long grain white rice or brown basmati rice (500 ml), plus two (2) cups (about 500 ml) red apple (chopped and cored).
Prepare about one-half (1/2) cup of toasted cashews and coconut, as well as four (4) cups of vegetable broth (or about one liter).
​

You will need two (2) tablespoons of butter or oil (30 ml); two (2) tablespoons of curry paste (30 ml); two (2) tablespoons of each cinnamon, cardamom, cumin, salt and pepper (optional, or depending on your diet).
You will also need to prepare two (2) cups of diced tomatoes (about 500 ml), one-half (1/2) cup (125 ml) cilantro (chopped and divided) and one (1) cup each carrots, chopped onion and celery.

Melt butter in a large, deep saucepan.

Then, put onions, carrots and celery in pan for approximately ten minutes or until onions are cooked. Mix cinnamon, cumin, cardamom and curry paste in pan. You may add pepper and salt (depending on your taste or preference).

​Do this for about one minute; and mix rice until you notice each grain is pretty much filled with curry blend.
Adjust heat to high, then add broth and bring to boil.

Make sure you cover the pan, then lower heat. Simmer, but do not stir - until you see rice is well-cooked, for a period of fifteen (15) to twenty (20) minutes.

Turn the heat down. Put apples, cilantro (half-portion) and tomatoes in pan.

Cover and wait for about five (5) minutes. Transfer to serving plate and add cashews, coconut and cilantro (other half-portion).

You can now enjoy and share with your family members and/or guests this vegetarian/vegan recipe.

This Indian-inspired Apple Pilau Dish will create about six (6) to eight (8) servings.

How to Cook Grande Harvest Long Grain Brown Rice

If you are wondering how you can typically prepare brown rice, here is how you can cook GRANDE HARVEST U.S. Long Grain Brown Rice:

​Place one cup rice and two cups of water in a two-quart saucepan.

​Depending on your diet, you may want to add one teaspoon salt. Some brown rice lovers would cook brown rice by adding butter, margarine or one tablespoon oil. Again, the add-on would be optional, depending on your taste and preference.
​

Some people who prefer firmer brown rice tend to apply less water.
Make sure that brown rice is cooked to a full boil. You may adjust heat to simmer. Use an appropriate-fitting lid to cover the saucepan, and simmer until water is absorbed, approximately within 40 to 45 minutes.

When brown rice is cooked, wait for about five minutes before serving.
​

When you cook one cup of long grain brown rice, you will notice that you have actually cooked three (3) cups of rice.

Southwest Salsa Bites

Southwest Salsa Bites

3 cups cooked brown rice 750 ml
1 cup shredded pepper jack cheese 250 ml
4 eggs 4
1 16 oz (500 ml) jar medium thick and chunky style salsa
1/2 cup sour cream 125 ml
1/2 tsp each salt and pepper 2 ml
3/4 cup crushed corn tortilla chips 175 ml
Additional salsa and sour cream for extra garnish


Preheat oven to 350°F (150°C).

Combine rice and cheese in large bowl; set aside.
​

In a medium bowl, beat eggs until well blended. Stir in salsa, sour cream, salt and pepper. Add salsa mixture to rice and cheese; mix well.
Spray miniature muffin pans with vegetable cooking spray.

Spoon approximately 1-1/2 tbsp (20 mL) of rice mixture into each cup, filling to just below the rim. Sprinkle crushed chips over filling, pressing slightly with back of spoon.

Bake 15 to 20 minutes, or until lightly browned. Serve warm with additional salsa and sour cream, if desired.

MAKES 48 APPETIZERS OR 8 SERVINGS

The following rice recipe has been provided courtesy of the USA RICE.
1 cup sugar 250 ml
2 large eggs plus 2 egg yolks 2
2/3 cup lemon juice 150 ml
1 tbsp finely grated lemon zest 15 ml
1/2 cup butter, softened 125 ml
3 cups cooked medium grain rice 750 ml
2/3 cups whipping cream, divided 150 ml
​1 cup blueberries 250 ml
Combine sugar, eggs, egg yolks, lemon juice and lemon zest in 2-quart saucepan. Cook over medium-low heat until thick and creamy (8 to 10 minutes), stirring constantly. Remove from heat; stir in butter and rice.
Cool. Fold in 1 cup whipped cream. Alternate layers of blueberries and rice pudding in parfait glasses.
​

Garnish with whipped cream and blueberries.
MAKES 8 SERVINGS.

You could, in fact, be creative by preparing fresh lemon slices as you try out our featured rice recipe!

To get started, you will need to prepare the following:
3/4 cup lemon-flavoured gelatin 175 ml
1 cup boiling water 250 ml
1/2 cup cold water 125 ml
1 cup cooked U.S. rice, chilled 250 ml
1-1/2 cups whipped topping 375 ml
1/4 cup sliced almonds 50 ml
1/4 cup chopped maraschino cherries 50 ml
​1 tbsp grated lemon peel 25 ml
Lemon slices for garnish

In large glass bowl, combine gelatin and boiling water and stir until dissolved; add cold water.
Place bowl in ice water and stir until gelatin is consistent of unbeaten egg whites; stir in rice.

Fold in whipped topping until smooth.

Lightly fold in almonds, cherries and lemon peel.
Continue to gently stir until thickened. Pour into serving dishes.
​

Cover and chill until ready to serve. Garnish with fresh lemon slices.
MAKES 8 SERVINGS.

"Halibut is flavoured with gingerroot, spicy chili sauce, sesame oil and only a tablespoon of low-sodium soy sauce. 

Halibut is flavoured with gingerroot, spicy chili sauce, sesame oil and only a tablespoon of low-sodium soy sauce.

​Baked in a foil pouch with tender baby bok choy, edamame beans and long grain rice, this exciting Asian themed all-in-one meal is ready in just 30 minutes.
​Here's how to prepare this recipe:
  • 2 cups low-sodium chicken broth 500 ml
  • 2 2-inch long pieces of gingerroot 2
  • 3 green onions, slivered 3
  • 2 tsp chili garlic sauce 10 ml
  • 1 tbsp each rice wine vinegar and low-sodium soy sauce 15 ml
  • 1 tsp sesame oil 5 ml
  • 2 cups frozen edamame (soy beans), shelled and thawed 500 ml
  • 2 cups instant U.S. long grain rice, divided 500 ml
  • 2 cups baby bok choy, divided 500 ml
  • 4 6 oz (175 g) halibut fillets 4

Garnish:
2 tbsp toasted sesame seeds 30 ml
1/4 cup sprigs of cilantro 50 ml

​In saucepan, bring broth, ginger root, onions, chili sauce, vinegar, soy sauce, oil and edamame to boil over medium high heat.

Reduce heat and simmer gently for 10 minutes.

Remove from heat.


Arrange 1/2 cup (125 ml) of uncooked rice in the centre of a 15-inch (40 cm) square of foil paper.

​Arrange 1/2 cup (125 ml) of bok choy over rice and top with a halibut fillet.

Repeat 3 times to make four packets. Form a “bowl” with foil. Ladle 1/4 of broth mixture over each packet and fold edges together to form a sealed parcel.
Arrange on a rimmed baking sheet. Bake in the centre of a 375 F (190 C) oven until the vegetables are tender, rice is cooked and fish flakes when pierced with a fork, about 15 minutes.

Let sit 5 minutes before serving. Arrange on dinner plates and sprinkle with toasted sesame seeds and sprigs of cilantro as a finishing touch.
Diets: Low-sodium, Semi-vegetarian, Gluten Free and Low Fat

Well, we have found a healthy rice recipe - flavourful burgers, ideal for both vegetarians and non-vegetarians.

​Here goes the Rice Recipe, Brown Rice Cuban Burgers:
  • 2 cups gluten-free vegetable or chicken broth 500 ml
  • 1 cup U.S. long grain brown rice 250 ml
  • 1/4 cup safflower oil (or a light flavoured cooking oil), divided 50 ml 1/2 cup finely diced red onion 125 ml 1/2 cup finely diced red pepper 125 ml
  • 1/2 cup finely diced mushrooms 125 ml
  • 1 clove garlic, minced 1
  • 1 tsp each, ground cumin and coriander 5 ml 1/2 tsp each,
  • coarse salt and red pepper flakes (less if desired) 2 ml
  • 1/2 cup gluten-free seasoned breadcrumbs 125 ml
  • 1 cup canned black beans, drained and rinsed well 250 ml
  • 2 oz Queso or crumbled feta 60g
  • 1 egg, lightly beaten 1
In saucepan, bring broth and rice to a boil over medium high heat. Reduce heat to low, cover and cook until all liquid has been absorbed, about 40 minutes. Let cool slightly.
In skillet, heat 1 tbsp (15 ml) of oil over medium-high heat. Cook red onion until tender, about 5 minutes. Stir in red pepper and mushrooms and cook until tender, about 5 minutes. Stir in garlic, cumin, coriander, salt and red pepper flakes and cook one minute.
Scrape onion mixture into the bowl of a food processor. Add breadcrumbs, cooked brown rice, black beans, queso or feta and egg and pulse until combined.

Using wet hands (will help mixture from sticking), form into ½ cup (125 ml) patties.
Cook in batches in a large, non-stick skillet over medium low heat, using 1 tbsp (15 mL) of the oil at a time until golden brown, about 6 to 8 minutes per side.

Serve on gluten-free buns with dill pickle slices and a yogurt cilantro sauce (and some extra Queso if you’re feeling decadent).

Makes 6 burgers.

Tip: Add 1/4 cup (50 ml) of chopped fresh cilantro to the burger mixture for added flair. Use regular breadcrumbs instead of gluten-free breadcrumbs if you prefer.

PER SERVING: about 270 cal, 7 g pro, 12 g total fat (2 g sat fat), 34 g carb, 4 g fibre, 40 mg chol, 200 mg sodium. %RDI: iron 8%, calcium 6%, vit A 15%, vit C 35%

Crepes:
4 eggs 4
1 1/2 cups milk 375 ml
1 1/3 cups all-purpose flour 325 ml
1/4 cup butter, melted 60 ml
1/4 tsp salt 1 ml
1/4 cup finely chopped fresh chives 60 ml

Filling:
1/4 cup butter, melted 60 ml
8 cups sliced cremini or white mushrooms 2 l
1 large onion, thinly sliced 1
2 cloves garlic, minced 2
1 tsp salt 5 ml
1/2 tsp freshly ground pepper 2 ml
8 cups fresh trimmed spinach leaves 2 l
1 3/4 cups cooked U.S. brown or white rice 425 ml 1/4 cup all-purpose flour 60 ml
1/2 cup dry sherry, dry white wine, or vegetable broth 125 ml
1 1/2 cups vegetable broth 375 ml
1 1/4 cups milk 300 ml
1 3/4 cups shredded Swiss cheese 425 ml
​1/4 tsp ground nutmeg 1 ml
Herbed Crepes:
In blender, blend eggs, milk, flour, 2 tbsp (30 mL) of the butter and the salt until smooth. Cover and refrigerate for at least 1 hour, or up to 24 hours.
Heat 8-inch (20 cm) crepe pan or stick-resistant skillet over medium heat; brush lightly with some of the remaining butter. Stir half of the chives into batter. For each crepe, pour about 1/3 cup (75 mL) batter into centre of pan, swirling to coat; cook, turning once, until set and light golden, about 1 minute. Transfer to plate; repeat with remaining batter to make 12 crepes.
Filling:
​In large, wide saucepan, melt 1 tbsp (15 mL) of the butter over medium-high heat; sauté mushrooms, onion, garlic, half of the salt, and the pepper until golden brown and liquid has evaporated, about 8 minutes. In 2 or 3 batches, add spinach, letting each batch wilt before adding the next, and stirring often. Once all is wilted, continue to cook until almost no liquid remains, 5 to 8 minutes. Remove from heat. Stir in rice.
In saucepan, melt remaining butter over medium heat; whisk in flour and cook, whisking often, until pale golden, about 2 minutes. Whisk in sherry, cooking for 1 minute. Whisk in broth until smooth, then whisk in milk; bring to boil. Reduce heat and simmer, whisking often, until smooth and thickened, about 5 minutes. Whisk in 1 cup (250 mL) of the cheese, the remaining salt and the nutmeg until smooth.
Stir 1 cup (250 mL) of the sauce into mushroom mixture.

Spread 1/2 cup (125 mL) of the sauce in greased 13- x 9-inch (3 L) glass baking dish.

Preheat oven to 375°F (190°C). With one crepe at a time, spoon about 1/3 cup (75 mL) filling in line along centre of each crepe.

​Roll up and arrange snuggly, seam side down and in single layer, in prepared dish. Drizzle sauce evenly overtop. Sprinkle with remaining cheese and chives.

Bake, uncovered in oven until golden and bubbly, 35 to 40 minutes.

Makes: 12 crepes, or 6 servings
​

PER SERVING (2 crepes): 637 calories, 29 g fat, 17 g saturated fat, 196 mg cholesterol, 922 mg sodium, 64 g carbohydrates, 5 g fibre, 29 g protein. % RDI: 47% calcium, 31% iron, 48% vitamin A, 29% vitamin C.

Summer Feature Rice Recipe
Lamb and Rice Koftas
​Lamb and Rice Koftas with Tahini Sauce
Tahini Yogurt Sauce: 
1/2 cup plain Greek or Balkan-style yogurt 125 mL
3 tbsp tahini 45 mL
1 1/2 tbsp lemon juice 22 mL
1 tbsp extra-virgin olive oil 15 mL
2 tbsp chopped fresh parsley or dill 30 ml
​Pinch each salt and cayenne pepper Pinch
Lamb Koftas: 
1/2 cup shelled pistachio nuts or cashews 125 ml
1/4 cup chopped fresh parsley 60 mL
2 green onions, chopped 2
1 egg 1
1 clove garlic, chopped 1
1 tsp each dried mint, ground coriander and paprika 5 ml
1/2 tsp salt 2 mL
1/4 tsp each cinnamon and freshly ground pepper 1 ml
1 cup cooked and cooled U.S. white or brown rice 250 ml
1 lb ground lamb 500 g
2 pieces naan bread, halved 2
1/4 cup thinly sliced red onion 60 ml
12 cherry tomatoes, halved 12
4 radishes, thinly sliced 4

Tahini Yogurt Sauce:
​In small bowl, mix together yogurt, tahini, lemon juice, olive oil, half of the parsley, the salt and cayenne. Stir in 3 tbsp (45 mL) water, or enough to make a thick yet pourable consistency; set aside.
Lamb Koftas: In food processor, purée pistachios, parsley, green onions, 3 tbsp (45 mL) water, egg, garlic, mint, coriander, paprika, salt, cinnamon and pepper until smooth, stopping to scrape down sides. Transfer to bowl; stir in rice until combined. Add lamb, mixing well.
Divide into 8 portions; form each into elongated egg shape. Thread 1 kofta onto each of 8 metal or soaked wooden skewers. Grill skewers, covered, on greased grill or in greased grill pan (if in grill pan, omit skewers) over medium heat, turning twice to create 3 sides, until no longer pink inside, 10 to 12 minutes.
Grill naan bread until warmed through, about 30 seconds; transfer to plates, along with two skewers each. Scatter red onion, tomatoes, radishes and remaining parsley on top. Serve with Tahini yogurt sauce drizzled overtop.

Makes: 4 servings

PER SERVING (2 koftas with naan and sauce): 681 calories, 38 g fat, 11 g saturated fat, 137 mg cholesterol, 1020 mg sodium, 46 g carbohydrates, 5 g fibre, 39 g protein. % RDI: 17% calcium, 52% iron, 9% vitamin A, 33% vitamin C.
